This intensive, one week residential course is designed specifically for those with little or no experience in the kitchen. It is the ideal course to prepare you for gap year and university life, if your personal circumstances have changed and you need to be more self reliant, if you are taking a career break or simply to provide a solid cookery base on which to grow.
By the end of five action-packed days of practical cookery, you will have mastered the essentials required for confident, assured cooking, as well as gaining an invaluable life skill.
At Middle Farm House, Lou has created a unique environment for a maximum of six students in which to learn to cook and have fun.
Learn the Basics of Cooking… from Starter to Finish
The week’s itinerary includes…
- Essential knife skills
- Stock, soups and sauces
- Baking skills including pastry and bread making
- Roasting, stews and casseroles
- Preparing and cooking fish, meat and vegetables
- Importance of food presentation
- Flavour through use of oils, vinegars, herbs and spices
As with the Foundation Course, a typical day begins with a morning of demonstrations and practical sessions, before sitting down to enjoy the fruits of your labour over a relaxed and informal lunch. This is followed by an afternoon session of preparing for dinner, including organising the kitchen, clearing up, and then presenting and serving a meal – all of which helps to shape a confident cook.
We stretch your knowledge by encouraging discussion on the dishes that are prepared, suggesting appropriate accompaniments; alternative seasonings; matching meals with wine.
Finally, having savoured the evening meal, you can make the most of the lovely house and grounds by relaxing in front of a roaring fire during winter, or getting out into the garden in the summer.
By the end of the week you will have a range of recipes that will be your staples for life. Whether you are going to be cooking at home or at university, for family or friends – remember that everyone loves a great cook!
